YAKITORI

INGREDIENTS

240g whole chicken leg (boneless)
40g small leeks
240g chicken breast
4 green asparagus
Salt (pinch)
4 lemon wedges
Chilli powder mix (shuchimi togarashi) – cayenne pepper can be used as a substitute

Sauce
20ml sake (a non-acidic white wine or water can be substituted)
20ml mirin
4 tsp sugar
20ml soy sauce

Seasoning
1 tsp salt
2 tbsp lemon juice

METHOD
1 Cut asparagus and leeks into 3cm lengths.
2 Cut the chicken leg and breast into 3cm chunks.
Marinating the breast
3 Arrange the pieces of chicken breast on a dish.
4 Add 1 tsp of salt and 2 tsp of lemon juice and leave to marinate.
Boiling the asparagus
5 Add the asparagus to boiling water, and cook until the water comes back to the boil. Drain.
6 Cool the asparagus in a bowl of cold water and then dry it off.
Skewering
7 Skewer the chunks of chicken leg and leek, and breast and asparagus, alternating between each.
Preparing the sauce
8 Put sugar and sake into the saucepan, add soy sauce and mirin.
9 Bring the sauce to a brief boil over moderate heat while stirring. Remove pan from heat.
Cooking
10 Heat the frying pan over moderate heat, add the chicken breast skewers and fry until light brown.
11 Turn the skewers, cover the pan with a lid and reduce to a low heat. Once cooked, transfer to a dish.
12 Repeat with chicken leg skewers.
13 Once light brown, continue cooking by regularly coating both sides with the sauce.
14 Place both varieties of Yakitori on serving dishes and garnish with lemon wedges.
15 Season with chilli powder mix (or cayenne pepper), to taste.
